easy as 1, 2, 3

Tuesday

The meals we planned during our car ride on Monday were simple ones. Since we lost our weekend to prep food we selected easy meals that we know and like.

I got up yesterday morning and hopped on the bike trainer. After a weekend without any specific workouts I was craving sweat! 45 minutes on the bike while catching up on Parenthood from last week!

1. Breakfast: oats made on the stove top with unsweetened coconut milk, maple syrup, cinnamon, raisins, and added blueberries and banana on top.

Getting back to work after being off two days was rough. I was catching up on missed emails, determining the status of my projects, and handling tasks that needed to get done right away. I snacked on some mixed nuts and carrots before I ate a late lunch (due to a noon meeting).

2. Lunch: salad greens with diced peppers, grape tomatoes, and sprouts topped with 2 fried eggs.

Afterwards I continued to tackle my growing list of to-dos, went to more meetings, and snacked on a very fresh honeycrisp apple! My fav.

Boy, once I got home, I was more than hungry… I snacked on some pretzel crisps and  fig newtons (thanks to Mom Hammer) while making dinner.

3. Dinner: Baked pork chops, baked potato wedges, and brussels sprouts.

This was a pretty simple meal.

  • First we sliced a potato into wedges, coated with olive oil and salt and pepper, and roasted in a 450 degree preheated oven for 25 minutes. Flip them halfway.
  • Our pork chops were very thick so we split them, drizzled them with olive oil, rubbed on taco seasoning and added them to the hot oven for 12 minutes. Once the wedges were done we dropped the temp to 350 for an add’l 10 minutes.
  • The brussels sprouts are just as easy. I trimmed the bases and quartered them. Bryan heated up a pan with coconut oil and we tossed them until browned with garlic powder, salt, and pepper.

And there you have it. Simple, easy meals for the day. Delicious and healthy, too. (Now let’s hope my focus on cleaner eating this week pays off on the scale!) 🙂

bike into the sunset + a birthday

Tuesday

Wow, yesterday was busy! And that might even be an understatement! Us Project Managers know how to get work done, but sometimes it’s just not easy. Thankfully the sun was shining yesterday afternoon so I hurried my butt out of the office so the Hammer and I could get in a bike ride before the sun set.

We were able to ride for 45 minutes. I think we covered about 12 miles and kept about a 16 mph pace. Not bad for just riding on the canal path. It was a bit chilly, but felt so nice to get out there. Oh how I love my ride!

And then for dinner we had the last of our pork chops, butternut squash, and some green beans.

Today

This morning I woke up well before I’d like to, 5:30am, and got ready to run. Kate and I met up and ran a leisurely ~3.5 miles around town before the sunrise! It was nice to get out there and get the blood flowing before 7am. It was very dark and chilly this morning, but you can’t take me out of shorts just yet. I’m not ready for the cold weather! 😦

Lucky for me, we have a birthday to celebrate in my office, so in honor of Melissa’s special day there were bagels, donut holes, and cupcakes to choose from this morning! I snagged a cranberry walnut bagel. This was exactly what I needed after back to back workouts last night and this morning. It saved me from eating my arm off!

little miss clean

Wednesday

Besides the downpour of rain we had at 5pm, the rest of the day was perfect. A little sun, breeze and 70. I made a point of getting home at lunchtime to take Marley for a walk. The little prissy girl that she is won’t even step outside when it’s raining. She has me trained well!

I powered up for my workout with a big afternoon snack. Apple, carrots, and crunchy sunbutter.

My workout for the day was cleaning! After work I was on a mission. All laundry was done and folded and put away. Clean sheets on the bed. Picked up a bunch. And vacuumed the whole house. The only task not done was cleaning the kitchen floor, but no fear, it’ll get done now because I went to Target for more cleaning supplies last night. 😉

The Hammer handled the clean dishes and dinner last night like a saint. I’m a lucky girl. I have to continue to remind myself of this.

Dinner was a beautiful fall plate: baked pork chop, mashed butternut squash, and swiss chard.

And that’s my exciting Wednesday. Today is going to be a great day: shopping at lunch, bootcamp tonight and then Kate’s birthday dinner afterwards. Happy Thursday!

Wednesday

Yesterday ended up being a beautiful day out. Mid-70s was quite the surprise. Hammer and I decided to take advantage of it. It could be our last chance, so we met up for lunch at Genesee River Park. This is the only photo I got of us. 🙂

We sat at a picnic table right by the water.

Lunch was the same as Tuesday – our “stew/chili”. Snacks happened along with boat loads of work in the afternoon. Thumbs down!

After work Kate and I went out for 3 miles. It felt good to get my legs moving and chat with Kate! 🙂 My legs are still feeling tired from the race. Nothing a little bootcamp can’t take care of tonight!

And then dinner again was a mix of pork chops (grilled), potatoes (baked wedges) and  (ta-da!) broccoli.

It’s Thursday, right? Can we get this show on the road for Friday?
